I am thankful for each one of you who are reading this blog at the moment, and of those not reading it too, and for every little chance that life has given me to be there for the ones I love and to be almost finishing up my career which is going to be the next big milestone in my life at the time. I am also thankful because everyday I get to see amazing things happen and of the great things that are to come.

Healthy Recipe: Zucchinis Pizza Style

Lately my grandfather has taken a toll on cooking and he's been doing a great job. His European roots are flourishing I guess. So he has invented this really yummy healthy recipe and has our house-hold just going cray cray about it. My mom used to not like zucchinis but with this! it worked magic.

It is a perfect lunch, and pretty easy to make too. It will only take a couple of minutes if you have to run out the door and want to have a properly served dish.

Here is the Recipe:

Ingredients:

1 zucchini
1 tomato
salt
pepper
Parmesan cheese (grated) or if you don't have Parmesan you can have some mozzarella.
Butter (optional)
Oregano

How to make them:

Cut the Zucchini in half. Set aside. Slice the tomatoes so that they are nice and even. Sprinkle the zucchini halves with some salt, pepper, and some grated mozzarella cheese and then put the tomato slices on top (you can also spread some of the butter on top of the zucchinis before sprinkling with salt, pepper and cheese) and then sprinkle with some oregano. That is is. Then put in the microwave for 15 minutes in medium power. If you have a high power microwave oven then reduce the time to half or until you see it done.

And that is it! as simple as that you will have a nice lunch or dinner easily! I hope you try it and tell me what you think about it!

So December is here...

Hey Everyone!

I can't belief the year is almost over! It's hollyday season and final exams for me begin this Saturday!  I've been crazy busy this past month and i am SO eager to stop running like a headless chicken all over the place :) I want to focus on the hollydays and begin decorating my house...yes I know, i still haven't done it and that makes me feel sad. I love the Christmas spirit, it makes me feel much much more happy and alive.

As a tradition, in my family we tend to focus on the dinner table for Christmas and we prepare some jummy recipes and just thinking about them make my mouth water. I really wish i had healthier versions of them but, it's just that time of year in which you can indulge a bit with all the flavour and the jumminess of the season.

As soon as I finish my final exams, I am TOTALLY going back at writing regular posts in here, i feel i have a lot of things to say and so not enough time.

Hope you are enjoying the spirit of this season and making the best out of every moment!

talk to you all, so very soon <3

Crepes & Waffles

Hey guys!

Today I am going to grab dinner with my cousins and we are going to crepes and waffles. It is one of our favorite restaurants and they have a lot of different healthy choices. It is a great local restaurant for Latin America and it has franchises over different of the countries.

My favorite dish is the chicken and mushroom crepe which is super tasty and nice! it has a milky type of sauce and it just doesn't have that much calories.

here is a picture taken from Trip Advisor of this dish, it just look AH-MAZING :)

Tell me, what are your plans for this Saturday night?

Have a nice day!

Hey Guys!

I just wanted to know what are you having for lunch today or what did you had for lunch if it's already dinner time where you live.

I am having stuffing cucumbers filled in with a sort of meatball, it is so good and so nutritive and it doesn't have a lot of calories and is so filling!

Meal Diary: Monday&Tuesday

Hey Everyone!

So I have been eating really good lately and specially i had no idea that i was good at cooking!
Making these meals have made me realize the importance that a perfect balance makes and to know how to mix the things you eat.

For the past days, Monday and Tuesday, i ate:

Monday:

  • Breakfast: a bowl of special K with milk
  • Lunch: A chicken filled in with asparagus and Edam cheese. with steamed vegies and just a little ampunt of rice.
  • Dinner: an orange and half a banana
Tuesday:
  • Breakfast: A bowl of special K with milk (it's my go to breakfast, and it is easy and healthy)
  • Lunch: A chicken kind of soup with potatoes and raisins and carrots and a little rice by the side. (here in Peru we have to have rice as our side dish, we are characterized by that.)
  • Dinner: A bowl of oatmeal and an orange.
These are all the things that have gotten into my tummy and i feel really happy about it. It's not too much food and it is well balanced in order not to lack of anything.

I cooked the first dish on monday, lunch. and i think it was pretty awesome that i can actually cook! this is a big deal! now i can live alone and not starve! hahaha

such a drama lady.

I will attach a picture when i download them to my computer.

So what have you been eating? tell me about it in the comments below :)

day 2...Apples

Good day everyone?

well, today i woke up and made me some breakfast, i had one corn tortilla with a piece of avocado, and since here in Peru the winter is hitting a cup of coffee is always a good way to go for the cold weather. Then i proceeded to go to university and sit down for a 3 hour lecture of accounting. I don't know how i go through it but definitely drinking water makes it sound and easier, don't ask me why, maybe it's the fact that drinking water makes my mind wonder for a little while off of the topic that is so dreadful and difficult. I wanted to eat an apple so i forced my self to go to the cafeteria and hunt for one. Obviously i had to cross the yard and the field and battle with the COLD WIND, by the time i got there i found out that they DO NOT sell apples or any other kind of fruits unless they are in a fruit salad, which i was not likely to pay for it just wanting a simple APPLE.  So as decided as i was, i said to them that they should sell apples and a lot more people would be happy that they could find an apple.

Tip: Eating an apple a day increases your body defences and are great antioxidants.

Now, as a highlight of my day after the apple feud, i got to spend a nice evening relaxing at home and got to eat dinner with my parents as the cute little family we are, i'm an only child. We had a home made soup by my momma! :)

And if you are wondering if i had any sweet cravings, i did, but calmed it down with a piece of chocolate and that made an awesome job!

love,
A
